Southwestern Casserole

Ingredients:

1 c. uncooked elbow macaroni
1 lb. ground beef
1/2 large onion, chopped
1 can (14.5 oz) diced tomatoes, undrained
1/2 can (8 oz) kidney beans, rinsed and drained
1/2 can (3 oz) tomato paste
1/2 can (2 oz) chopped green chiles, drained
1 tsp. salt
1/2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. pepper
1 c. shredded Monterey Jack cheese
1 jalapeno pepper, seeded and chopped

Directions:

Cook macaroni according to directions. In a large saucepan, cook beef and onion over medium heat until meat is no longer pink, breaking it into crumbles. Add garlic and cook for one more minute. Drain. Stir in the next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture.
Preheat oven to 375. Transfer macaroni mixture to a 2-qt. greased baking dish. Top with cheese & jalapenos. Cover and bake for 30 minutes. Uncover, bake unti bubbly and heat through, about 10 minutes longer. Serve and enjoy!
