1 Whole Pineapple
1 c. diced bell peppers
1 c. diced tomatoes
1/3 c. chopped cilantro
1/4 c. minced red onion
1/4 tsp. black pepper
1/8 tsp. salt
1) Cut the pineapple in half and use a spoon to scoop out pineapple inside. Pour extra juice out of the pineapple so it is empty.
2) Dice pineapple chunks for the salsa.
3) Mix together diced pineapple, diced tomatoes, diced peppers, minced onions, chopped cilantro, lime juice, salt and pepper.
4) Transfer salsa to the pineapple bowl for serving.
